Stiff Peaks was a top-rated 90's TV drama starring Kyle MacLachlan...oh, food. Okay. When a recipe calls for separated eggs, you remove the yolk from the white and use each separately. Sometimes, as in the case of homemade mayonnaise, the yolks are all you need. But for many baking recipes, egg whites beaten until frothy and mousse-like which form "stiff peaks" hold all the other ingredients together. Notable occurances: meringues. Best done with: a hand mixer and a copper, stainless steel or glass bowl.
