10 Simple gluten-free recipes for a healthy summer
Even if you're not damned to live without bread, beer and pasta for all eternity, gluten freedom can be liberating. 01. Chickpea Fries
Chickpea fries, also known as Panelle or Panisse, are as good as, maybe even better than, French fries. Even though they require two steps — making the chickpea porridge, then shaping and frying — they’re not much more difficult and are far more reliable. 01. Ratatouille Risotto
Because we’re at the height of summer’s produce season, I load in ratatouille-style vegetables from my own farm. Your local green market should be just as plentiful. Remember that freshly picked vegetables have a shiny exterior, and that squash and eggplant should feel “tight” (squishy = loaded with water = soggy). See our Ratatouille Risotto recipe here.

03. Roasted Potatoes with Huanciana Sauce

04. Blue Cheese Grapes and Peaches
Pressing blue cheese onto grapes and peaches can make your fingers a little, well, blue-cheesy. I recommend wearing disposable rubber gloves for the assembly. Placing your finished grapes back in the shape of a bunch of grapes is an easy and impressive presentation that makes any cheese platter look fantastic. 05. Sweet Avocado Ice Pops

06. Salt and Pepper Shrimp

07. Grilled Peaches and Cream

08. Bacon-Wrapped Trout With Pesto

10. Tacos al Pastor With Pineapple Salsa
Jesse Vega, sous-chef at New York's Sueños Restaurant, created this recipe for the Manhattan launch of the Familia Camarena Tequila's gourmet taco truck.
