Marinated Sun-Dried Tomatoes Recipe

This tangy flavor can completely overhaul your typical sandwich or pasta salad. It's quick and easy to make and will last in the fridge for up to 6 weeks.
Servings: 1 cups
Ingredients
1 8-ounce jar sun-dried tomatoes, oil-packed
2 tablespoons red wine vinegar
2 tablespoons sugar
1 tablespoon garlic, chopped
1 teaspoon crushed red pepper flakes
Directions:
In the bowl of a food processor fitted with the metal blade, put the sun-dried tomatoes and their oil, the vinegar, sugar, garlic, and red pepper flakes and pulse until coarsely chopped. Season to taste with salt and pepper. Use right away, or cover and refrigerate for up to 6 weeks.
