Korean Marinade Recipe

Thanks in part to chefs like Roy Choi and his Kogi Korean BBQ truck empire, Korean-influenced BBQ has never been hotter. You can DIY a Korean grilling experience at home this weekend with our Korean Marinade recipe. This sweet and spicy marinade can be used on steak, pork, or chicken.

A marinade is a liquid mix of spices and an acid, usually citrus or vinegar, or in this case soy sauce, in which you soak raw foods before cooking. Marinades infuse meat with flavor and also can make meat more tender by softening and breaking down connective tissue before cooking begins. Marinades are especially useful when grilling because of the quick cooking times.

1/2 pounds meat
Ingredients
  • 1/2 cup scallions
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 3 tablespoons fresh ginger
  • 3 cloves garlic
  • 2 tablespoons toasted sesame seeds
  • 2 tablespoons sesame oil
Directions
  1. In a large zip top bag combine all ingredients. 
  2. Add steak and marinate in the fridge for 4 to 8 hours. Never leave uncooked marinating meat at room temperature for more than 40 minutes.
