Held October 9-12 in Acapulco, the Global Forum of Mexican Cuisine aimed to celebrate and examine Mexico’s food systems and culinary culture through conferences and workshops covering topics like food production, techniques, nutritional sciences and food sustainability. Participating chefs and presenters included Enrique Olvera, Alex Stupak and Rich Bayless. Dallas chef Braden Wages (Malai Kitchen) was also on hand to lead a demonstration with Dallas-based Mexican restaurateur Mico Rodriguez. Their mission — explain the similarities between Thai and Mexican cuisines. A stretch for some, but not for Wages who wrote in to tell us about it.

Eight years ago Tre Wilcox was an overweight sous chef who, like a lot of his peers in the kitchen, got "comfortable." Today he's probably one of the fittest chefs in Texas. No small feat in the birthplace of the fried twinkie. Wilcox estimates that 70% of chefs are overweight, a figure that he tell us he finds "disappointing." More after the jump...
