Although mixing neutral oils like vegetable or canola oil with boxed brownie mixes adds the proper amount of fat to the recipe, they don’t offer any additional flavor or richness.
The flavor nuances in olive oil, however, can translate well to the recipe. Be sure not to use fancy olive oils, as they’re finishing oils not meant to be incorporated into dishes.
Olive oils can range from light and neutral to peppery and grassy, so take a little taste of the oil before adding it to the mix to know what flavor you can expect in your brownie.
Flavored olive oils infused with orange or lemon yield an interesting result. You can also use pistachio, almond, or walnut oil to impart a nutty flavor without adding actual nuts.
