Tiktok's Chicken Cobbler Is The Best Way To Use Red Lobster Biscuit Mix
TikTok's viral chicken cobbler recipe created by Matthew Bounds, who goes by @yourbarefootneighbor on the platform, is sort of a cozy blanket in the form of a one-pan meal.
In Bounds’ recipe, the protein comes from shredded rotisserie chicken, and the cobbler aspect is where the Red Lobster Cheddar Bay Biscuit Mix comes into play.
To start, layer in shredded chicken and frozen peas and carrots over a melted butter stick in a baking dish. Over that, pour a batter made of the biscuit mix and equal parts milk.
Then, pour in a mix of chicken stock and cream of chicken soup and bake until golden brown. The result will be a tender, creamy topping with crisp edges and a custardy middle.
Cubed pork chops or any kind of pre-cooked chicken will work for this adaptable dish. As for the veggies, you can use cauliflower, broccoli, green beans, or a bag of mixed veggies.
You can also add something like sauteed mushrooms for some heft. You can swap the whole milk for non-dairy milk and the cream of chicken soup for any other creamy condensed soup.
Vegetable stock can be used for the stock. If you want a crispier biscuit topping, pour the soup mixture over the chicken and veggies and then add the biscuit batter.
