The Underrated Vegetable That Makes A Mean Gnocchi
When it comes to gnocchi, you don’t need to limit your creativity to interesting sauces. You can make this delightful Italian dish with many vegetables other than potatoes.
Cauliflower, sweet potato, beets, broccoli, and pumpkin make great alternatives to the traditional potato base. The humble, hearty carrot is also an excellent and versatile option.
Carrot gnocchi is a vibrant, nutrient-rich alternative that contains antioxidants, potassium, vitamin A, and beta-carotene. Its subtle sweetness complements a myriad of sauces.
Gnocchi recipes have long been adapted for local ingredients. Pumpkin is even said to be the original base, so if you use other veggies, you’ll still be making authentic gnocchi.
For the best carrot gnocchi, use roasted carrots instead of boiled carrots. Roasting removes excess moisture, intensifies the flavor and sweetness, and results in a darker color.
