If you’re making a salad only to discover your lettuce has wilted, try using hot water to refresh the leaves and quickly hydrate them.
While an ice-cold bath is commonly used to perk up withered leaves, warm water can actually be more efficient in giving lettuce a boost of hydration since it’s easily absorbed.
Lettuce loses hydration when refrigerated through a process known as transpiration, so if you notice your leaves beginning to droop, give them a warm water bath to boost hydration.
Simply make sure your lettuce isn’t showing any signs of rotting, and then soak it in a bowl of hot but not scalding water for about 15 to 30 minutes.
