The Easiest Way To Turn A Frozen Veggie Medley Into Dinner
The best way to use medleys of multiple frozen veggies is to mix them with rice for a rice pilaf. It’s a nutritious recipe that can adapt to almost anything you have handy.
Dice an onion or the white part of several scallions into small pieces, mince a couple of garlic cloves, and sauté them in olive oil inside a wide, deep-sided pan over medium heat.
When the onions soften, add raw rice and toss to coat the grains with oil, then add salt, pepper, and other spices. Once the rice is slightly toasted, add water or broth to the pan.
Stir, cover, and wait for it to boil before lowering the heat and simmering for 10 minutes. Then add the vegetable medley, mix it thoroughly, cover, and simmer for 10 more minutes.
Lastly, adjust the seasoning once the vegetables are heated and the rice is cooked. If you have cooked rice available, you can also make fried rice using frozen vegetable medleys.
Mince some garlic, scallion, ginger, and other aromatics, and fry them in a deep-sided pot with neutral oil. Add in the frozen vegetable medley and fry until it is heated through.
Crumble the cooked rice with your hands to help the grains easily separate during frying. Add the rice to the pot, mix it with the veggies, and keep stirring to prevent sticking.
Finally, add soy sauce, chili paste, sesame oil, and other seasonings. Optionally, you can put in beaten eggs or cubed leftover meat when you add the rice for some added protein.
