Anthony Bourdain, a celebrated chef, author, and TV host, believed that many people omit an essential step when cooking steak: allowing the meat to rest before serving.
Leaving a steak for a few minutes off the heat allows the muscle fibers to relax, encouraging all the delicious juices within the protein to be redistributed throughout the steak.
Due to carryover cooking, Bourdain advised removing the steak from heat before it reaches the desired doneness, then resting it for five to seven minutes at room temperature.
Bourdain recommended leaving the steak untouched and uncovered during the resting period. Resting in a low oven to keep it warm can lead to a dry, overcooked steak.
