Old-fashioned oats are the best for chewy, satisfying, and delicious oatmeal cookies. In comparison, instant oats lack a chewy texture, and steel-cut oats are too tough.
Unlike steel-cut oats, old-fashioned oats are steamed and softened, but not as thoroughly as instant oats are. These oats are hearty and flavorful without being too hard or soft.
You can make do with the other oats with simple adjustments. For instant oats, add a little bit of extra liquid so they don’t dry up and become too dense.
Some prefer instant oats over old-fashioned oats since they’re less chewy and have more of a floury texture, making the oat flakes less obvious. They’re also very customizable.
