Martha Stewart's Famous Smashed Potatoes Are Deliciously Simple
Smashed Baked Potato is a fan favorite on the menu at The Bedford by Martha Stewart, the farmhouse-inspired restaurant that takes up residence at the Paris Hotel in Las Vegas.
At the restaurant, the baked potato is smashed tableside and topped with crème fraîche, chives, and bacon lardons. The best part is that the dish is fairly easy to recreate.
Start by baking an Idaho potato, and once it’s soft enough to pierce through, cut a slit lengthwise down the middle of the potato. Then, nestle the piping hot potato in a cloth.
Once done, forcefully smash the potato cut-side down onto the surface of a clean table to open it up and break up all its fibers. Lastly, top it off with your favorite toppings.
