Ina Garten's French Potato Salad Swaps Mayo For A Boozy Substitution
Potato salad is a welcome addition to any family gathering or potluck. For those with an aversion to mayonnaise, try chef Ina Garten’s creative ingredient swap.
Ina Garten starts with a French potato salad packed with herbs and dressed with a zesty Dijon mustard vinaigrette. Instead of mayo, Garten adds wine to her French potato salad.
Garten opts for a dry white wine like Pinot Grigio or Sauvignon Blanc and uses just a few tablespoons so it doesn’t overpower the dish.
Garten adds the wine while the potatoes are still warm so they can absorb the liquid. It imbues them with “so much flavor” according to a YouTube video by Garten.
To make the potato salad, Garten cooks a mixture of red and white potatoes, then thinly slices them before adding a dash of dry white wine and a splash of chicken stock.
The chef makes a vinaigrette of champagne vinegar, Dijon mustard, salt, pepper, and olive oil. The vinaigrette and potatoes are then mixed with fresh scallions, dill, and basil.
