Giada De Laurentiis' Fresh Replacement To Heavy Alfredo Sauce
To lighten up her Fettuccine Alfredo recipe, Giada De Laurentiis uses something she calls white pesto, sharing on TikTok that it's "similar to a creamy Alfredo, but super fresh."
The white pesto still uses dairy for creaminess but swaps heavy cream for ricotta cheese. In her TikTok, she says it’s "as decadent as a no-cook Alfredo sauce."
Its ingredients include olive oil, walnuts, Parmesan cheese, ricotta cheese, garlic, lemon zest, salt, and fresh basil. Giada endorses Manfredi Lunghi pasta, but any pasta will do.
To start, toast the walnuts in the oven until slightly dark and fragrant, then crush them in a blender as finely as possible before blending in the remainder of the ingredients.
Stir the white pesto sauce into the pasta, using some pasta water to loosen up the sauce until, as Giada says, it's "creamy.” Top it all with some freshly torn basil leaves.
