To make Laurentiis’ zucchini crudo, cut the zucchini into thin slices with a knife or a mandolin When finished, lay the slices on a plate and sprinkle with flaky sea salt.
The salt will draw out excess moisture, slightly softening the zucchini. Let it stand for a couple of minutes, then zest an entire lemon over the top to give it a citrus scent.
You can also use the prepped zucchini for other purposes. For example, you can arrange them with slices of Roma tomatoes for a colorful summer salad.
