Instant mashed potatoes are convenient and quick to make, but they can be lacking in the flavor department. One solution is to replace the water with vegetable stock.
Reconstitute the powder with vegetable stock to add a deeper flavor. Instant mashed potatoes only contain a handful of ingredients, so this hack will enhance its savoriness.
Use the same amount of veggie stock as you would water, adjusting for the desired consistency. For a richer flavor, chicken stock can be used, though it may be more seasoned.
You can also prepare a large batch of veggie broth with optional additions like Parmesan rinds or ginger, then store it in the freezer and eat it anytime.
