Boxed cornbread recipes often call for milk, eggs, and sometimes vegetable oil to be blended into the mix. However, for a creamier consistency, you should also add some mayonnaise.
Since mayonnaise is primarily fat and made of ingredients also found in cornbread recipes, it can add richness and moisture to skillet cornbread without changing the flavor.
Mayonnaise can either replace the oil in the cornbread recipe or serve as an additional ingredient that you can use to keep the cornbread soft for an extended period.
From a scientific perspective, mayonnaise acts as an emulsion that envelopes the flour and inhibits gluten formation, giving cakes, cookies, and quick breads a tender texture.
