Egg Foo Young Omelets Were Designed To Elevate Your Leftovers
American Chinese food may have a reputation as a heavily bastardized version of authentic Chinese cuisine, but there are still some fusion foods worth trying, like egg foo young.
Egg foo young is an omelet-like egg dish that combines eggs, vegetables, and protein into a crispy and fluffy pancake that is served with Chinese-inspired gravy and rice.
To make the dish, start by making a gravy of oyster sauce, soy sauce, Chinese cooking wine, sesame oil, and cornstarch. Simmer until thickened.
Select your fillings for your eggs, whether last night’s leftovers or fresh produce and meat. Dice your ingredients and whisk into eggs before frying on high heat with oil.
Common additions include bean sprouts, tomato, broccoli, squash, and mushrooms with proteins like chicken, pork or shrimp. Serve with the gravy and a scallion garnish.
