Dolly Parton's Unexpected Ingredient For Tangy Coleslaw

Singer and actor Dolly Parton’s 1989 cookbook, "Dollywood Presents: Tennessee Mountain Home Cooking," features a coleslaw recipe that uses pickles and has recently gone viral.

It starts with a chopped or thinly sliced head of green cabbage. Onion, grated carrot, diced sweet bell pepper and a tablespoon of chopped dill pickle are then combined in a bowl.

The slaw dressing consists of mayonnaise, sweet pickle juice, white vinegar, sugar, salt, and pepper, which are poured over the vegetables before everything is tossed together.

While the mayo makes the dish creamy, the pickles, pickle juice, and vinegar give the crunchy slaw a bright freshness that keeps the classic Southern side dish from being heavy.

Dolly's recipe is a perfect side dish for fried chicken dinners or weekend barbecues, but you can also top pulled pork sandwiches, hamburgers, hot dogs, or tacos with it.
