Change Up Your Shrimp Game And Give Them A Milk Bath
Shrimp with an overly fishy aroma can be off-putting. Soaking them in milk eliminates unpleasant odors, ensuring a milder taste, and it won’t even impact your prep time.
Soak the shrimp for 10 to 30 minutes, then rinse and dry them thoroughly. Leftover moisture can hinder proper browning if you are grilling, roasting, or sautéing the shrimp.
The technique works because the casein in milk binds with trimethylamine (TMA), the compound responsible for fishy smells. It is effectively removed when the milk is discarded.
Using buttermilk instead of plain milk imparts a tangy flavor and has a tenderizing effect. Seasoning the liquid also enhances flavors, while adding baking soda improves texture.
