Whole lemons lose some of their tartness and bitterness when they’re caramelized, but their flavor still comes through, creating a fresh, nuanced, and rich dish.

To caramelize a lemon, place thin slices in a frying pan with cooking oil over medium-low heat. Turn a few times until each side is browned and the lemon is dissolved and softened.
