Bobby Flay Tops His Steaks With One Particularly Funky Cheese

While chef Bobby Flay’s fans know him for his traditional recipes, he likes experimenting. One of his most unique pairings for steak might just be blue cheese.

With its savory notes, the creamy cheese makes a fatty cut like ribeye even richer while adding sharpness. You don't need a ton of cheese if you want to start slow.

Flay likes to mix blue cheese with butter and thyme to create a creamy, savory spread, which he then dollops onto a steak after plating.

He also adds the cheese and leftover browned butter from his skillet. The chef uses this ingredient with grilled and pan-seared steaks, so try it with your favorite recipe.
