We’ve been fans of food-focused short film series Made By Hand since they released their debut film back in September, profiling the first gin distillery in Brooklyn since Prohibition. Switching gears, their second release focuses on fiction writer turned knife maker Joel Bukiewicz of Cut Brooklyn. He makes badass kitchen knives in his Gowanus studio.

It was a tough go at first, but he eventually grew a business that now commands over a year wait for knives—which range in style from hunting and utility to kitchen steels (which are profiled in the film). “You go into the shop and cut yourself and burn yourself and fuck stuff up and ruin something that you have been working on, but you never make that mistake again,” he says of the knives that can require require as much as 15 hours of labor pure knife.
