Quick and Easy Skillet Teriyaki Chicken Recipe

Ingredients
  • 1 ½ pounds chicken thighs, cut into 1-inch cubes
  • 2 tablespoons vegetable oil
  • ½ cup sake
  • ½ cup mirin
  • ½ cup soy sauce
  • ¼ cup sugar
  • 1 teaspoon rice vinegar
  • ¾ teaspoon garlic powder
  • ¾ teaspoon ground ginger
  • 2 tablespoons cornstarch
  • 2 scallions, thinly sliced, to garnish
Directions
  1. In a large skillet, sauté the chicken in vegetable oil over medium-high heat for around 10 minutes until cooked through.
  2. Meanwhile, combine the sake, mirin, soy sauce, sugar, rice vinegar, garlic powder, and ground ginger in a bowl, and stir until the sugar dissolves.
  3. Put the cornstarch in a small bowl and add ¼ cup of the sauce.
  4. Stir the mixture until smooth, then pour it into the bowl with the rest of the sauce.
  5. When the chicken is cooked through, give the sauce a quick stir then pour it into the skillet.
  6. Bring the sauce to a simmer, and cook for 3 to 5 minutes to thicken.
  7. Garnish with thinly sliced scallions and serve with rice and steamed broccoli.
