This week, Food Republic's first annual Macaroni and Cheese Week, we focused on our favorite recipes from cookbooks, restaurants and FR recipe developers and added in a few other dishes we thought worthy enough to stand by that spread. This week, pretty much only one recipe matters: Sean Brock's epic, perfect, oozing specimen of a magnificent cheeseburger. Everyone on the FR staff has had it and can attest: this man holds the key. We also dug into a fresh skillet of Brock's signature bacon-studded cornbread while discussing why epic cheeseburgers don't have truffle cheese. Enjoy this week's Sean Brock recipes (and at least acknowledge the others).

Break out the braisers, it's time for slow-cooked sausage soup and a delicious twist on coq au vin and let's all give a standing ovation for the return of meatloaf season. Know what's great with meatloaf? Scallion fries, which are of course the new onion rings. Speaking of new ways to spin something you've had before, butternut squash soup, that perennial darling of the seasonal menu, is vastly improved with bourbon, apples and roasted kale. In regular cheese news this week, we'd wager you haven't made baked ziti since it turned into casserole season out of nowhere. And we'd bet the farm you've never made French-style buckwheat crêpes topped with bacon smothered in cheese. In pimento cheese news, which is always happy and never sad news, breakfast will simply never be the same: waffles and breakfast sandwiches love pimento cheese and will forever more. There's just something about watching the video of a spiral vegetable tart being put together that keeps bringing us back. Of course, the photogenic tart wasn't our only addition to our rapidly-expanding recipe section this week. Meat lovers should check out our new spiced lamb, smoked pork sausage and kebab sliders recipes, while vegetarians can take comfort in crispy oyster mushroom steaks and a kale salad stocked with goodies.

This week brought about a few instant classics: chiefly, those buns. Just make them, okay? Ditto Dale Talde's Kale Taco Salad with the only salsa verde dressing you'll ever need to know how to make. Every Jewish holiday going forward will probably involve Jerusalem Kugel (every single Jewish holiday) and we're swapping out popcorn for Taiwanese salt and pepper chicken on movie night.
