The Pyknic boys are at it again. For the uninitiated, Pyknic is a streetwear brand with a decidedly culinary bent. When we last checked in, they were trying to figure out a cost-effective way to make dark chocolate pants. Now, they've released their Late Fall 2012 collection and their cast of foodie cartoon characters has grown exponentially.

My great (late) friend, famed newspaperman Johnny Apple, has written that these fritters are found in abundance from lacey white dressed street vendors on the streets of Bahía and in particular from the colonial district called the “Pelourinho,” whose very name is a reminder of harsher days; pelourinho means “flogging post” in Portuguese. These snacks are often served with a somewhat complex Brazilian sauce called vatapá but I have stuffed them with an equally delicious crab salad.

There is now a San Francisco fan base for this pie. I tested and tweaked the recipe given to us by the folks at Oh my! Pocket Pies, in Houston, Texas, producing multiple batches that I shared with friends. The response was amazing: these pies got the loudest cheers of any pie in this book. I heard about how many pies were scarfed at one sitting, and of wives hiding the pies from their husbands.

This makes a wonderful hors d’oeuvre or lunch pie and is especially good when paired with a cornmeal crust, as we have done here, though a butter or lard crust is an excellent choice, too. The filling puffs as it bakes and becomes a lovely light gold. If you cannot find farmer cheese, ricotta cheese or cottage cheese can be substituted.

My tasters liked these because they have a ton of zingy flavor without the bite of hot wings. The pepper also makes a crunchy coating. If you end up wanting to add heat (hey, we're indecisive too), a few dashes of habanero sauce should do the trick.

While these bison-stuffed chicken wings require a little more effort than other wing recipes, they are well worth it. The pistachio adds an addictive crunchy quality. One taste of these smoked and stuffed wings and you too will agree that these impressive crowd-pleasers are worth the extra time in the kitchen.

Sweet with some heat, these ginger-lime chicken wings have layers of flavor. They’re flavorful enough to hold their own on a fancy buffet or as a light lunch. They're also perfect for kicking back with some beers in front of the screen, so we'd call these wings a best-case scenario.
