The Scout Waterhouse & Kitchen in Chicago's South Loop has long loaves of brioche and isn't afraid to cut them lengthwise for the mammoth sandwich they call the Foot-Long Triple Cheese. It contains nine slices of cheese (American, muenster and cheddar, all made in Wisconsin) and comes with short rib if you so desire. Pair it with a Goose Island Endless IPA for the grown-up after-school snack we've all been dreaming of.

In honor of Grilling Month, here's a grilled cheese sandwich that doesn't lie about how it's cooked. This sandwich starts with crabmeat that’s tossed in a dressing with tons of bright, fresh flavors and then layered onto sourdough bread with sliced tomato, bacon and sharp cheddar cheese. And then, of course, it gets all toasty and melty on the grill. I’m not ashamed to admit that I like to indulge in such things from time to time. Somehow I have a feeling I’m not the only one!
