The pearls are clearly visible in both of our versions, suspended in a cooked egg mixture. I’ve kicked things up, though, by flavoring the cake with coconut and lime and serving it with papaya. This makes a unique dessert, one I urge you to try.

My parents' house in El Paso had four fruit trees in the backyard—apple, apricot, peach and membrillo (quince). Mi mama  sat for hours peeling piles of apples and then she would make warm apple pies and empanadas. I have simplified the recipe to avoid cooking the apples first, and they come out just as tasty as mama’s.

My assistant has been working on perfecting the classic Snickers bar. Her latest version actually transcends the store-bought ones. I make a double batch of them and store one in the freezer. I think they might even be better when served frozen. You decide.
