Three easy steps to burger sauce nirvana
Jan 23, 2013 2:03 pm

We all know what secret sauce is. It goes by a lot of different names, but seemingly every decent burger joint has some form of it. In-n-Out has spread. McDonald's has the oh-so-clever Special Sauce. Shake Shack has Shack Sauce. What's it called? I call it secret sauce, but you can call it whatever you want — point being, every burger lover should learn how to make it.

Leviton's homemade XO sauce, a salty-savory-sweet Chinese condiment made from caramelized dried seafood and sausage, is a great match for pork belly, scallops and a range of other Chinese dishes. You’ll notice that the XO sauce calls for house-dried seafood, but the home chef can buy this all at a well-stocked Asian market.

Harissa is the classic Moroccan chili sauce. I make it in small amounts because you need only a little at a time, but you can double the quantities if you think you’ll use it within four months. Some are made with roasted peppers and tomatoes, but I like a pure chile flavor.

See that jar of mayo in your fridge? You might as well toss it. One second thought, you may as well throw away every bottled condiment in your fridge because while they had a good run, tzatziki works on absolutely everything from doner sandwiches to stuffed burgers and salads.

If you've ever been to a place with fish and chips on the menu, malt vinegar is a good condiment to know and love. Malt is the term for germinated and dried grains of barley, used in adding a rich, nutty, toasty flavor to some of our very favorite things. Like beer. And milkshakes. And the vinegar we copiously shake onto fish and chips.

Some of us at Food Republic think sriracha goes well with everything. Even vanilla ice cream. (Trust us on that one.) Redeye gravy, for the great mass of Northerners who may not know better, is made by using coffee, often instant coffee, to deglaze a skillet in which country ham has been fried. It is traditionally poured over grits. This is our riff on redeye gravy, which is a way of not calling it coffee-flavored mayonnaise.
