It's not always easy observing Meatless Monday, especially when your next-door neighbor, downstairs neighbor and ground-level super all appear to be frying bacon. But it's Meatless Monday, I'm powerless to cheat at this point, so I turn to the meatiest vegetarian non-meat substitute I know: baked tofu. Pull it off using today's lunch advice after the jump.

We recently drove about two hours north of New York City to visit with Josephine Proul, executive chef at the farm-to-table restaurant Local 111 in small-town Philmont. I found two new ways to enjoy them. Also if the Hindu god of fixin' that which ain't broke comes looking for me, I'm not here.

A wise man once said “Oh baby I like it raw. Yeah baby, I like it rawwwww.” That man was Ol' Dirty Bastard. Since I'm neither old nor dirty, I don't share his sentiments. I've never been much of a fan of the raw movement.  I know there's a ton of health benefits to eating raw, but I couldn't get past the nagging question that kept popping up in my head: Can raw food actually taste good?

It's always nice to take a break from everything tasty, and...no, that came out wrong. I don't need to process food in a slow and controlled manner, because... sigh. It's not easy writing about vegan food when you're a strict onmivore. So I'm focusing on 10 vegan ways to keep things absolutely, rib-stickingly satisfying come lunchtime, when meat has either been shunned entirely or the zombiepocalypse has taken out the majority of the farm animals, two very unlike extremes you should still prepare for.
