When it comes to my favorite Thanksgiving food, I'm in the (proud) minority: I LOVE stuffing. And to be honest, I love even the most basic boxed stuff. But while I have a soft spot in my heart for Stove Top and that ilk, we can all do better. You know what's in that box? Seasoned bread crumbs. Come, my child, and let me show you how to ascend to a higher plane of stuffing. It involves sourdough bread and home-pickling. And it is good.

You're always going to need to know the basics, so you might as well master them. That's why we picked up From Scratch, a book of classic recipes for preserves, pickles, spreads, charcuterie and more by French cookbook authors Laurence and Gilles Laurendon. This makes a wonderful hors d’oeuvre or lunch pie and is especially good when paired with a cornmeal crust, as we have done here, though a butter or lard crust is an excellent choice, too. The filling puffs as it bakes and becomes a lovely light gold. If you cannot find farmer cheese, ricotta cheese or cottage cheese can be substituted.

This is a serious salad. Bright crisp herbs and tangy frisée cut through the fat of the crispy duck cracklings, which are basically bacon bits directly from God. This is not a dieter's delight, but an indulgent delicious salad sure to satisfy the hungriest of men (and women).
