There's no better way to enjoy beautiful spring vegetables than on simple buttery puff pastry with all the accoutrements. We borrowed this recipe from Tom Aikens' cookbook, Fresh, so we'd have a platform for all this farmers market produce we've been Instagramming non-stop. Hey, what would you do if presented with a spring vegetable tart this aesthetically pleasing?

I'm a big proponent of frozen puff pastry. It's not that I don't like the greasy film of flour that develops over my entire kitchen as I fold buttery layer over buttery layer twelve times (allowing ample time for it to rest, of course). No wait, it's that. Besides, the filling is where you want to focus your TLC.

Filet of beef "en croute," better known as Beef Wellington, is a classic holiday dish. Since filet or tenderloin is generally a leaner cut than, say, a ribeye or a Porterhouse, it makes perfect sense to wrap it in something almost completely composed of butter: puff pastry, with a layer of sauteed mushrooms in between to keep things moist and flavorful.
