I said it with regard to our Coconut Macaroon Pancakes, and I'll say it now: there is no reason you can't have cookies for breakfast. But if you want to be somewhat of a grown person about it, make them into pancakes for an instantly legit sweet brunch fix.

I was a long ass way from home. We had hitchhiked from Chicago to Denver and on a total whim decided to fly to Hawaii to visit a buddy we left back there a year earlier. We rambled around the Big Island going nearly broke really quickly. But hunger is a fixed clock. Money was tight. I longed for a big plate of pancakes. Their hot, steaming buttery sweetness would pack my 19-year-old belly.

Savory crepes are made with half buckwheat and half all-purpose flour. Soba noodles are 80% buckwheat flour and 20% all-purpose. Even the blini for your potential caviar is a blend: 2 parts buckwheat flour to 1 part all-purpose. So naturally, a variation on this formula must translate into delicious brunch pancakes.
