Let's Have Some Fungus! Hanging With Mushroom Fanatics In Santa Cruz

A report from the recent 40th Annual Fungus Fair
Jan 21, 2014 11:00 am

Mushrooms bloom in mystery, their mycelial organism and its secret whims hidden underground. From the caked earth, nary a sprout; and yet at the Santa Cruz Fungus Fair in early January, the mushroom hunter was on full, majestic display. Here's a special report from our California correspondent William Bostwick.

Few things are as good as a meal cooked by either of the Sussmans, Max or Eli. Long story short, go to Brooklyn, eat at Mile End or Roberta's and tell 'em we sent you. We liked their first cookbook, This Is A Cookbook, a whole bunch. But their second book, released this past fall, the aptly named Best Cookbook Ever, kind of is the best cookbook ever. We want to make everything in it, starting with this vegetarian soba noodle recipe.

The Cowgirl Creamery Cookbook is a must for any cheese-lover's kitchen. Packed with stories, recipes and plenty of other reasons to gorge yourself on fine cheese, the cowgirls' masterful new book is a great reason to neglect that brick of boring cheddar and open yourself up to something a little more exciting. This superb vegetarian lasagna, for example. Dig into these layers after the jump.

When I was traveling in Peru, I came across this truly delicious (and healthy) version of risotto using quinoa. The flavor is nuttier with earthiness from the mushrooms, and it has more texture than your traditional risotto. With quinoa's nutritional value, I love that I don't feel guilty when I whip this up on a weeknight.

Ideas for this seriously delicious sandwich star

I've never had a bad portobello mushroom experience in my life. Not in the guise of a burger, not as the main attraction in a sandwich and certainly not as part of a grilled vegetable lineup. They're basically pretty much awesome, so let's make some sandwiches for Meatless Monday, shall we?

Hack Of The Day: Rosemary Portobello "Crowns"

Infuse those shrooms with some herb. Wait...

Are you grillin'? Cause I'm grillin'. I'm grillin' all summer long, and not just the good stuff — sometimes you have to take a break from the good stuff. I'm talking about portobello mushroom caps, and yes they get heat for being the go-to vegetarian "steak substitute" at barbecues, mostly because they're boring and not particularly photogenic. But with one festive hack, everyone's going to want one. In addition to a steak.

What Is The Best Way To Clean Mushrooms?

You bought 'em, now let's get those shrooms clean
Jun 28, 2013 1:31 pm

We'll make quick work of this one (while trying not to sound like mom): you can't just eat mushrooms out of the box. They're dirty. Only this time, they're literally dirty, like with actual dirt, and can't just be "washed." Here's how you clean them.
