Bay Area artist Phil Ross has been interested in mushrooms since the late 1980s, when he worked in hospice care and patients would drink reishi tea to strengthen their immune systems. Since then, he’s delved deeper in the fungal world. He discovered that mushrooms could be used to create a super durable, fireproof, water-resistant material. He tells us all about it, after the jump.

These spinach and enchilada mushrooms are a fixture on the menu at Fonda, which just opened its second location in NYC's East Village. For the chef, the key to the enchilada isn't what's inside. "I think the most important thing to focus when you’re doing enchiladas is that sauce," he tells Food Republic in a recent interview.
