Eating in England: Kedgeree

Another successful British spin on Indian food

kedgeree

I may have come off as anti-British Indian food yesterday when we posted a recipe for chicken tikka masala, the official dish of England. That was not my intention — I completely dig the stuff and know the difference between an authentic dish and a Western spin on an ethnic classic. I used to live near a Yoshinoya. Kedgeree is another beloved take on an Indian staple, kitcheri. Boy, do those Indians work magic with lentils and rice.

This is basic country food at its finest. Lisa Smith, the executive chef for Central Market supermarkets in Texas, was visiting us at the farm, and one morning we brought her to Max London’s in Saratoga Springs for breakfast. Their croissants blew her away and she called them the best she ever had.

Too many people don't know about scotch eggs. They're a genius combination of two major players in the brunch game — sausage and eggs — into one baseball-sized package of perfection. The concept of this beloved English pub snack is simple: hard-boil an egg for slightly less time than you normally would (about 8 minutes), cool, peel and sculpt a layer of ground pork sausage around it.

Boiled eggs, be they hard or soft, make an excellent breakfast. Truth be told, I like soft-boiled for breakfast and hard-boiled for lunch. There's an enormous difference: one's for eating and one's for dipping.

Arguably, it’s the filling that makes the egg. Sure, the whites are nice, but it’s the yolk filling, which has been known to brim with everything from smoked salmon and caviar to bacon...
