I love using buckwheat groats for cold salads — they have a unique and unexpected ultra-savory earthniess that just begs for something creamy and/or briny. Savory crepes are made with half buckwheat and half all-purpose flour. Soba noodles are 80% buckwheat flour and 20% all-purpose. Even the blini for your potential caviar is a blend: 2 parts buckwheat flour to 1 part all-purpose. So naturally, a variation on this formula must translate into delicious brunch pancakes.

No, soba is an truly an art form, carefully crafted by hand and eaten hot or cold, in soup or straight-up with nothing more than a dip in soy and rice vinegar. Plus, the last time I checked, ramen was still waiting at the door to the sandwich club.
