Marinades infuse meats with flavor and also help tenderize by breaking down connective tissue in the meat before cooking. Marinades are liquid-y mixes of spices and an acid, usually a citrus or a vinegar, or in this case, beer. Don’t worry about serving beer-soaked steak to kids or non-drinkers — the alcohol burns off during cooking, leaving super tender meat with a great char.
- 1 cup IPA (or other bitter ale)
- 1/4 cup lime juice
- 3 cloves garlic, smashed
- 1 teaspoon oregano
- 1 teaspoon basil
- 1/2 cup olive oil
- 1/2 teaspoon salt
- In a large zip top bag combine all ingredients.
- Add steak and marinate in the fridge for 4 to 8 hours. Never leave uncooked marinating meat at room temperature for more than 40 minutes.
