Ingredients
  • butter for the pan
  • flour for the pan
  • 1 1/4 sticks butter
  • 1 tablespoon vanilla sugar
  • 3/4 cup granulated sugar
  • 6 ounces dark chocolate (70%)
  • 3 large eggs
  • 2/3 cup all purpose flour
  • 2 pinches salt
  • 1 tablespoon green tea powder (matcha powder)
Directions
  1. Preheat the oven to 350°F.
  2. Butter a 9-inch square pan, preferably with a removable bottom, and dust it lightly with flour. You can also line it with parchment paper.
  3. In a standing mixer, whip the butter, vanilla sugar and sugar together until lightened and fluffy.
  4. Chop the chocolate and melt in the microwave.
  5. Beat the egg whites in a separate bowl.
  6. Stir the egg yolks into the butter mixture and then whisk in the chocolate.
  7. Fold in the flour, salt and egg whites.
  8. Pour the batter into the pan and bake on the lowest rack for about 25 minutes.
  9. Remove and let cool.
  10. When the cake is completely cool and firm, dust it with matcha powder and cut into pieces.
