Red Rooster's Black History Month Menu Celebrates Female Chefs Of Color

In honor of Black History Month, Marcus Samuelsson of Red Rooster Harlem in New York City's Harlem designed an $85 prix fixe menu to be served throughout February. The dishes were created in collaboration with a number of female chefs of color, including Zarela Martinea, Lee Anne Wong and Red Rooster's own Rose Pena. The dishes highlight the chefs' diverse cultural backgrounds and pay tribute to New York icons of yesteryear Lillian Harris Dean and Pamela Strobel.

Crispy pig tater tot with Chinese mustard, pickled green tomato

First course inspired by chef Lee Anne Wong

Warm salad of grains and peas with hakurei turnips, winter squash, toasted curry brown butter, house-made labneh, chilis

Second course by Red Rooster sous chef Rose Pena

Pan-seared branzino with charred escarole, ají amarillo, pickled kumquats, peppadew peppers, blood orange aioli, fried parsley

Third course by Zarela Martinez

Puerco con calabaza with braised pork butt, mashed pumpkin, toasted pumpkin seeds, cilantro
