In honor of Black History Month, Marcus Samuelsson of Red Rooster Harlem in New York City’s Harlem designed an $85 prix fixe menu to be served throughout February. The dishes were created in collaboration with a number of female chefs of color, including Zarela Martinea, Lee Anne Wong and Red Rooster’s own Rose Pena. The dishes highlight the chefs’ diverse cultural backgrounds and pay tribute to New York icons of yesteryear Lillian Harris Dean and Pamela Strobel.
