How do you improve salmon? Wrap it in prosciutto.

Few things can’t be improved with a little cured meat, not limited to salad dressing. But we’re tackling main courses…and two types of bread with cured pig baked right in. There’s French and Italian and Chinese charcuterie, plus a cured lamb belly sandwich that’s 100% worth the slightly advanced undertaking. Hey, make a lamb belly sandwich on that taleggio and pancetta-stuffed focaccia!
