When certain cheeses are past their prime – particularly soft cheeses like brie – they smell and sometimes taste like ammonia. They're still safe to eat, but we advise you wrap your cheese in something that allows it to breathe, like paper. Ammoniated cheese usually happens when the cheese is stored tightly wrapped in plastic for too long.
