Paul Qui is on a helluva roll. The Top Chef Season 9 winner and Uchiko executive chef added to his string of successes last night in New York with a win for Best Chef: Southeast at the James Beard Awards.
During our recent Food Republic Interview Lounge at the W Austin, Qui, and his Uchi/Uchiko mates Tyson Cole (owner and chef of Uchi) and pastry chef Philip Speer, talked about the importance of staff meals. But the highlight comes when FR’s Matt Rodbard rather indiscreetly asks Qui what he’ll do with his earnings from his Top Chef victory.
