Meatless Monday: Veggie Porn

I love Meatless Monday. I've been observing it for about six months (is that a horn I hear tooting itself?) and have actually gotten really into making, or buying, awesome vegetarian food for lunch. Without going into how Meatless Monday affects our entirely messed up food system (positively), or how it's truly kind to your body to only eat vegetables one day a week (die imposter hippie Jess), I'm happy to report that you can be full and satisfied as though you'd eaten meat if the vegetables are really delicious.
