We are on the lookout for a creative matzo recipe for Passover, which begins Monday, April 18. How to keep a flour-free diet interesting for 8 days? Let's start with a clever Matzo Pizza recipe as our pizza of the week to bring an Italian influence to Passover. 

To start, take your basic piece of matzo. Lightly sprinkle with a bit of water or olive oil. Top with tomato sauce, but not too much or you will have soggy matzo pizza. Sprinkle with grated or shredded mozzarella cheese. Add your vegetable topping of choice—we've tried olives, artichokes, and feta cheese as one tasty combo. Of course, no pepperoni or meat can be used if you're combining with cheese, as it's not kosher. Bake in the oven, or toaster oven, at 400 degrees for about 5 minutes or until the cheese has melted.
